A tasty dish, very popular in Algeria and Morocco, also available in tagine form. Light and delicious, with a lemony taste and a creamy sauce. This dish is so popular that it can be prepared for wedding or engagement dinners.

Chicken with Olives


  • 4 chicken thighs
  • 1 handful LE BRIN D’OLIVIER pitted green olives or lemon-stuffed green olives
  • 2 onions
  • 3 cloves garlic
  • 4 tablespoons fresh lemon juice


  • 3 tablespoons curry powder
  • 3 tablespoons chopped parsley
  • 5 tablespoons LE BRIN D’OLIVIER olive oil
  • salt and pepper

Step 1 :

Using a knife, bone and cut the chicken thighs into pieces. Slice the onion and chop the garlic.

Step 2 :

Turn on the heat, take a casserole dish and pour in LE BRIN D’OLIVIER olive oil. When the oil is hot, add the onions and sauté for 5 min. Once the onions are golden brown, add the chicken pieces, garlic and curry powder, stirring well, then cook for 10 min over high heat, stirring regularly.

Step 3 :

When the chicken is golden brown, add water to just cover the chicken pieces, and season with salt and pepper to taste. Cover and cook over low heat for 30 min.

Step 4 :

Add the LE BRIN D’OLIVIER pitted green olives and fresh lemon juice. Stir, cover and cook for a further 20 min.

Step 5 :

When the chicken is cooked, add the chopped parsley.

It’s ready!

Serve with rice or semolina.
