Pepper, feta
& olive cake by Le Brin d’Olivier

Ingredients
- 1 jar of roasted peppers from Les gourmandises d’Emma
- 60 g black olives with herbes de Provence from Le Brin d’Olivier
- 200 g feta
- 3 eggs
- 10 cl milk
- 10 cl oil (use the oil from the jar of peppers!)
- 100 g T60 flour
- 80 g T150 flour
- ½ sachet of baking powder
- 1 tsp paprika
- 1 tsp herbes de Provence
- Salt & pepper
Preparation
Step 1
Preheat your oven to 180°C.
Step 2
Blend the roasted peppers, drain off the oil (keep it to one side) and chop them into pieces. Stone the olives and slice them into rounds. Cut two-thirds of the feta into cubes and set the rest aside
Step 3
Whisk the eggs, then pour in the milk and oil. Gradually add the flour, followed by the baking powder. Season with paprika, herbes de Provence, salt and pepper.
Step 4
Gently fold in the roasted peppers, olives and cubes of feta. Mix well, then pour into a loaf tin that has been greased and floured. Crumble the remaining third of the feta over the top.
Step 5
Bake for 50 minutes and leave to cool before turning out. Enjoy your meal!
