New !
Kalamata
Le Brin d’Olivier is proud to present its new olive variety: the Kalamata. Directly imported from Greece through a partnership with passionate local producers, this iconic olive enriches our collection, offering a unique tasting experience. The Kalamata olive, with its elongated shape and deep purple hue, delights with its fleshy texture and fruity, slightly bitter flavors, followed by a sweet, almond-like finish. Perfect for a Greek salad, tapenade, or a slow-cooked dish.
Lucques from Languedoc
The Lucques of Languedoc is an emblematic variety from the south of France. Harvested between September and October, it is easily recognized by its crescent-moon shape and firm flesh. Highly prized as a table olive, it offers a smooth and fruity flavor with notes of hazelnut and avocado that makes it one of the most sought-after varieties among connoisseurs.
Picholine from Gard
Picholine green olives are harvested in September/October. Once delivered by the growers to Brin d’Olivier in Nyons, we take care of processing. Sorting, grading, immersion in a slightly alkaline bath, rinsing for several days and immersion in a salt-based brine directly from the Aigues Mortes salt marshes in the Camargue are all necessary steps before the olive can be tasted! Lively and fruity on the palate, Picholine is highly appreciated as a table olive.
Black Olives of Nyons PDO
The black olive from Nyons, also known as the Tanche, is an PDO (Protected Designation of Origin) variety. It is harvested in December and January in the Baronnies region around Nyons. Producers deliver them to Brin d’Olivier, and we take care of processing it for our olive confectionery business. Its aroma is reminiscent of hazelnuts and apples.
Picholine Olives crushed with fennel
The Picholine olive variety, lively and fruity on the palate, is highly appreciated as a table olive. We prepare these olives by lightly breaking their delicate flesh, then marinating them with fennel and spices, allowing them to infuse to the heart of the olive. This method gives them a fine, pronounced taste and tender flesh. Picholine Olives crushed with fennel will delight gourmets in search of new flayors.
Greek-style Black Olives with Aromates of Provence
Our Greek-style black olives with herbs are selected by us in Morocco. These Beldi olives benefit from the daily sunshine needed to ripent hem perfectly. Characterised by their flesh and a strong aroma, we prepare them with a simple drizzle of oil and herbs for an authentic Provencal aperitif.
Picholine Tapenade
French Origin
Our green tapenade is made in Provence using only French Picholine olives, selected by Le Brin d’Olivier from local producers. They are made according to a traditional recipe combining olives, anchovies, capers, olive oil, lemon juice, basil, Provencal herbs and spices. To be enjoyed without moderation as an aperitif or to make delicious cooked dishes.
Tanche Tapenade
French Origin
Made in the heart of Provence, our black tapenade showcases the Tanche olive, a French variety renowned for its delicacy and character. The olives are carefully selected by Le Brin d’Olivier from local partner producers, guaranteeing quality and authenticity. Prepared according to traditional Provençal expertise, it subtly combines black olives, anchovies, capers, olive oil, lemon juice, basil, herbes de Provence, and a hint of spices. Its generous texture and intense flavor reveal all the richness of the Mediterranean terroir.
Nyons Extra Virgin Olive Oil PDO
Our PDO Nyons extra virgin olive oil is produced in the Drôme provençale region using only French Tanche olives. The olives have been selected by Le Brin d’Olivier from local producers, and entrusted to local mills for the crushing phase. To be enjoyed without moderation for your seasonings.
Picholine Extra Virgin Olive Oil
Produced in the Gard region, our extra virgin olive oil is made exclusively from French Picholine olives, renowned for their lively character and slightly fiery notes. Expressive and balanced, this oil reveals delicate vegetal flavors and a beautiful intensity on the palate. It is the perfect accompaniment to salads, grilled vegetables, fish, or simply drizzled over crusty bread to appreciate its full richness.
